"I have chosen to use the old preserving bottles made by Vacola and used by families extensively during the mid 20th century to preserve fruit and vegetables. It is a significant choice for me, growing up on a fruit farm where I assisted my mother more times than I can count, preparing peaches, plums, apples, pears and tomatoes for preserving.

The bottles are a uniform size, as you would do with a batch of preserves, so that cooking times are the same. The clamps that are used in the cooking process are retained, although they would be removed once the cooking process was complete and the seal established. As I haven’t created a heat seal the clamps are necessary to keep the lids on, and provide a defining element that says "preserves".
